Olive and Rice Casserole


1 cup long grain rice, uncooked
1 cup sharp cheese, diced
1-2 oz. jar stuffed olives, sliced
1 cup tomatoes
1/2 cup onion, chopped
1/2 cup salad oil (I use Wishbone dressing)
1 cup water
salt and pepper to taste

Combine all ingredients and bake in casserole dish for 1 hour at 350  degrees. (covered) Do not be alarmed by the soupy appearance of this dish. When it goes into the oven, the rice will absorb the moisture. If this recipe is doubled, add 15 minutes to the cooking time. This makes a delicious buffet dish. Serves 6.
