Southern Baked Ham

Preheat oven to 325 degrees.

Get a good bone in ham about 10-12 lbs. Put in a roaster and place in a pre-heated 325 degree oven. Roast, uncovered, about 3 hours. Take ham out of oven and cut off skin and some of the fat. Score remaining fat and stick in whole cloves in the intersections.

Make a glaze of the following:

1 box brown sugar
1 tablespoon mustard
orange juice concentrate (enough to moisten to a paste)

Smooth the glaze over the fat side of the ham and return to oven for a while longer. You will know when the ham is done by the smell and also by feeling the hock bone. If it is loose and wiggles, it is done. The drippings are as good as the ham.
