Pie Crust


1 egg
1 teaspoon white vinegar
1/2 cup water
3 cups flour
1 cup plus 2 tablespoons shortening
1 teaspoon salt

Place egg in small bowl. Beat with fork. Add vinegar, water. Mix well. Place flour, shortening and salt in a large bowl. Mix with fork until crumbly. Add egg mixture to the flour mixture. Form into 3 balls. Wrap and chill for 30 minutes. Roll out between two pieces of plastic wrap. (Wet counter under bottom of wrap and plastic won’t slide.) Roll with rolling pin. Remove top plastic. Place crust upside down in pie pan and remove the other plastic. Fill and bake. If recipe calls for a baked crust, bake 10 minutes at 400 degrees. Wrapped dough keeps in refrigerator up to 3 days.
